This good control has lead me to think again that the best explanation is my pancreas is still doing it's job so long as it's not asked to do anything to strenuous... As this is the way I like to work, I really can't hold it against my poor endocrine system. So now I'm thinking (again) what about another insulin free period. This time I'll be fair and only eat my current low carb diet and for added help I'll kick up the exercise to "regular" status. The main things I'll be interested in tracking are my fasting BGLs (currently between 4.8-5.3 or "normal") and obviously my post prandial levels. I will also keep track of any palpitations I experience (if they happen at work I'll try to capture an ECG to make sure it's nothing too dire). I will give this one week starting today. As my medical team has been uninterested to this point, I have not bothered informing them.
Fingers crossed everyone...

Best of luck with the insulin free week - it's worth trying if you're really not sure if you're type 1. Might force them to take another look at you if you can slap some data in their faces :)
